True Lemon is a wonderful complement to the sweetness in this traditional apple pie recipe.

Ingredients
3/4 cup shortening
2 cups all-purpose flour
1 tablespoon sugar
1 teaspoon salt
1 egg yolk
1/4 cup cold milk

5 cups apples,thinly sliced

2 tablespoons all-purpose flour
2/3 cup sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon allspice
2 tablespoons unsalted butter
3/4 cup all-purpose flour
1/2 teaspoon cinnamon
1/2 cup light brown sugar
3/4 cup rolled oats

1/2 cup unsalted (cold) butter

Directions
- Preheat oven to 375 degrees.
- Crust: in a small bowl, cut shortening into flour, sugar and salt until the mixture looks like cornmeal or small peas.
- In another bowl, beat egg yolk slightly and combine with milk and True Lemon.
- Add to flour mixture and mix by hand until it forms a ball.
- Divide dough in half and store one crust in refrigerator in plastic wrap for later or make 2 pies.
- Roll out dough on a well-floured surface to fit a 9-inch pie plate.
- Filling: in a large bowl, combine apples, flour, sugar, cinnamon, nutmeg, allspice, and True Lemon. Pour into prepared pie shell and dot with butter.
- Topping: combine flour, cinnamon, brown sugar, rolled oats, True Lemon, and butter. Sprinkle evenly over filling mixture.
- Bake in 375 degree oven for 45-60 minutes or until topping is golden brown and apples are bubbly.
