Gnudi with a True Orange-Brown Butter Sauce

Originating from the gnocchi family, this ricotta dumpling is light, fluffy, and creamy. Topped with a brown butter sauce and True Orange, this dish will keep you coming back for more!

Ingredients
- 2 cups fresh ricotta cheese
- 2 eggs
- 3-4 cups of flour
- Salt and pepper
- 1 stick (1/2 a cup) of butter
- 2 sprigs of fresh sage

4 packets True Orange
Directions
- Fill a pot with water. Place the pot on the stove and turn to high heat.
- In a mixing bowl combine ricotta and eggs, and season with salt. Stir in 1 cup of flour at a time until the mixture no longer sticks to your hand.
- Taking a quarter of the dough at a time, roll the dough into a long log, using extra flour so it doesn't stick. Make it so the log is about a 1/2 inch thick. Cut the log into 1-inch-long pieces.
- When the gnudi are formed, throw into a pot of boiling water and let cook. When the gnudi float to the top, they are finished cooking.
- In a separate large sauté pan, add the butter, True Orange, fresh sage, salt, and pepper. Cook over medium heat until warmed through, stirring occasionally.
- When the gnudi is done cooking, remove from the pot and add to the large sauté pan full of butter. Turn heat to high, and let cook until the sides start to brown.
- Serve with any leftover sage as garnish.
Recipe Note
If you aren't confident in your gnudi, boil one at first to make sure you have added enough flour. If it disintegrates you need more flour, if it holds up you did it perfectly!
