We love this salad when we're not too hungry or on days when we're not as active. It’s light and refreshing!

Ingredients
- For the salad:
- 2-3 cups of arugula
- 1-2 cups mixed veggies: cucumbers, sprouts, tomatoes, red peppers, cilantro or parsley
- Sprinkle of toasted almonds
- ½ cup chilled quinoa
- ½ sliced pear
- ½ can albacore tuna (optional)
- white kidney beans (optional)
- For the dressing:
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon white wine or champagne vinegar

2 packets of True Orange
- 1/2 teaspoon dijon mustard
- dash of sea salt
Directions
- Assemble salad: arugula, cucumbers, sprouts, tomatoes, red peppers, cilantro (or parsley), chilled quinoa, and almonds.
- Combine all dressing ingredients in a mason jar. Cover and shake to mix.
- Drizzle 2-3 ounces of dressing over salad and serve.
- Refrigerate remaining dressing.
