Ingredients
- 1 pound red or russet potatoes

4 packets True LimeÂ
- 3 tablespoons water
- 1 tablespoon canola (or other unflavored) oil
- 1 teaspoon coarse salt
- 1 pound sweet potatoes

- 3 tablespoons water
- 1 tablespoon canola (or other unflavored) oil
- 1 teaspoon coarse salt

Directions
- This method works for both types of potatoes:
Peel potatoes and slice 1/8inch thick (a mandolin slicer makes this easy).
- Place potatoes in single layer on rimmed cookie sheet.
In a small cup, mix True Lime or True Orange (depending upon potato as indicated above) with water and drizzle over potatoes, turning slices once to coat both sides.
- Refrigerate for 30 minutes. Meanwhile, preheat oven to 450 degrees F.
- Drain potatoes well and pat dry.
- Place potatoes, oil, and salt in a medium mixing bowl and toss to coat. Spread in a single layer on a non-stick cookie sheet and bake for 15 minutes.
- Rotate sheet 180 degrees (half way around) and bake for 10 minutes longer or until crisp.
