A zesty chicken noodle soup from Chef Mary Lou Davis.

Ingredients
- 10 cups chicken broth or Stock ( Broth is made with meat, while stock is made with bones)
3 tablespoons Neutral Oil, I used sunflower.
- 10 cloves garlic, minced
- 1 carrot - small Diced
- 2 stalks celery Small Diced
- 1 yellow onion Small Diced

3 Tbs True Lemon
- 1lb Chicken. You can use breast or thighs, I used what was left of my rotisserie chicken.
- 1 cup Acini de Pepe pasta or Cous Cous
- 1/2 teaspoons crushed red pepper
- 1/3 cup chopped parsley
- Salt and pepper
Directions
- Simply sauté the celery, onion, carrot and minced garlic for 3-4 minutes to soften.
- Add the chicken broth, chicken breasts, and crushed red pepper to the pot. Raise the heat to high, cover, and bring to a boil. Once boiling, reduce the heat to medium, then simmer for 5 minutes.
- Stir in the couscous, salt, and black pepper to taste. Simmer another 5 minutes. Then turn the heat off.
- Remove the two chicken breasts from the pot and shred the chicken. Then place it back in the pot. Stir in the true lemon powder and chopped parsley
- Taste then salt and pepper as needed. Serve warm.
