True Lemon Greek Style Potatoes

Potatoes absorb lemony taste as they cook.
True Citrus
Ingredients
- 2 pounds Yukon Gold potatoes quartered and peeled
- (skin may be left on if desired)
1 cup water

4 packets True Lemon
- 1/2 cup finely chopped shallots
- 1/2 tablespoon dried thyme
- 1/4 teaspoon kosher salt
- 1 tablespoon plus 2 teaspoon olive oil
- 2 tablespoons chives
- 1 bay leaf
- Black pepper
Directions
- Preheat oven to 375 F.
- Place potatoes in large shallow baking dish.
- Combine water, True Lemon, shallots, thyme, salt and 1 tablespoon of the olive oil.
- Pour over potatoes and place bay leaf on top of potatoes.
- Bake, stir occasionally until potatoes have absorbed all of the liquid and are very tender (about 1 hour).
- Toss the potatoes with chives and the remaining 2 teaspoons olive oil and return to the oven.
- Bake for 10 minutes longer or until glazed and golden.
- Discard the bay leaf.
- Sprinkle with pepper and serve at once.
Recipe Note
Serve with a side of sour cream, and fresh chopped herbs as garnish.
