Ingredients
5 cups of water
5 cloves or 1 HUGE tbs garlic
3 Tbs salt
1/4 cup fish sauce
1/2 lb Chicken Wings, I used flats because they are superior.

2 tbsp green sichuan pepper (optional, you could also use True Citrus Lemon Pepper)
1 tsp Salt (since True lemon doesn't have any salt, it leaves you in control of how seasoned you want your food)

1 cup all-purpose Flour
1 Cup Corn Starch
2tbs seasoning mix
1/4 cup butter
1/2 cup your fav hot sauce
1Tbs slurry (water and cornstarch mixture)
1Tbs Seasoning mix

Directions
The 1st step is to brine your wings. This is going to help season your wings but also help them retain moisture. I like my wings extra crispy, so this step preserves my wings and keeps them juicy still. You'll combine everything for brine together, add in the wings, cover and refrigerate for 4 hours or overnight.
Now to make the seasoning mix you'll get your green peppercorns and grind them up. Mix with True citrus lemon and salt. If you do not have access to green szechuan peppercorns or you just don't want to use them, you can get True Citrus Lemon Pepper and save some steps. A great thing about True Lemon is that none of their products contain salt, so you can really control the flavor of your food.
Now make your flour mix, combine ap flour, cornstarch and seasoning mix.
Once your wings are brined, if you choose that step, you'll pull your wings out of the brine and toss them in your seasoned flour mix. Make sure to squeeze the wings and breading together to really get it to adhere.
Heat your oil to 350 and fry your wings for approximately 7-10 min. It depends on your wings and how done you want them. I like mine well done.
While the wings are cooking, make your sauce (if you want them wet. If not you can toss the wings in the seasoning mix and call it a day). Melt butter and add in hot sauce, season with 1 tbsp of seasoning mix.
In a bowl add 1 tbsp cornstarch and 1 tbsp cold water to create a slurry. Pour this into the sauce, on low heat. This will thicken the sauce and get it to coat your wings properly.
Once the wings are done, toss them. in as much of the sauce as desired and enjoy!
