True Lime Chicken Marinade

The marinade makes chicken so moist and tasty. It is easy to make, and can be drizzled on top of grilled veggies or rice as well.

Ingredients

12 packets True Lime
- Â 3/4 teaspoon salt
- 1 teaspoon ground ginger
- 2 teaspoons onion powder
- 1 tablespoon ground coriander
- 1 teaspoon ground black pepper
- 6 boneless skinless chicken breasts
- 1 1/2 cups low sodium chicken broth
- 1/4 cup honey
- 2 tablespoons butter
Directions
- Combine half the True Lime (6 packets), all of the salt, ginger, black pepper, onion powder, and coriander in a small bowl.
- Pat chicken breasts dry with a paper towel. Rub both sides of chicken with spice mixture.
- Spray a pan with non stick cooking spray.
- In a frying pan over high heat, brown both sides of the seasoned chicken. Reduce heat to medium. Cook chicken 4-5 minutes per side, turning once until chicken is nearly done.
- Combine remaining ingredients (honey, chicken broth, and remaining True Lime) and pour over chicken.
- Cook until sauce thickens into a thick glaze, about two to three minutes on high. If desired, thicken sauce with a little cornstarch dissolved into water (1 tablespoon of each).
- Finish sauce by melting butter into the pan, and stir until smooth.
- Plate chicken and drizzle additional sauce over the top.
