True Lime Corn and Black Bean Salsa

A delightful, versatile and healthy salsa.

Ingredients
- 1 can black beans, rinsed and drained
- 1 can corn, drained (or a package of frozen corn kernels)
- 4 fresh tomatoes, diced
- 1 jalapeno pepper, de-seeded and chopped
- 1/2 cup red onion, chopped
- 1/2cup cilantro, chopped

4 packets of True Lime
- 1/2 tsp salt
- 1/4 tsp freshly ground black pepper
- 2 dashes of hot sauce (optional)
Directions
Combine all the ingredients. Use it as is for a salsa, or serve it over hot brown rice for a hearty side dish. Add cooked, diced chicken to the rice/salsa dish and serve in warm tortillas. Yum!
