A zesty citrus marinade poured over fish and fresh vegetables.

Ingredients
2 salmon fillets
½ onion, sliced
1 leek (or shallot)
1 tbsp garlic, chopped
1 cup sweet potatoes, cubed
1 tbsp fennel, halved
1 cup cauliflower, chopped
½ cup carrots, sliced
1 cup green beans

1 tbsp True Lemon Pepper Spice Blend
1/2 cup of soy sauce
1/2 cup of rice wine vinegar
1/3 cup of olive oil
2 tablespoons of honey
1 tablespoon peeled and grated fresh ginger

4 packets of True Lemon
2 tablespoons of water
1 teaspoon of garlic powder
1 teaspoon of sesame oil
1/4 teaspoon of cayenne pepper
For The Base
For The Marinade
Directions
Combine all marinade ingredients and pour into a plastic bag with salmon fillets and let sit at room temperature for 1 hour.
Preheat oven to 375 degrees.
Chop and slice veggies and toss with True Lemon Pepper Spice Blend.
Arrange veggies on a cooking sheet.
Drain salmon and pat dry with paper towel. Place on top of veggies.
Cook 20-40 minutes or until salmon is done. Broil for last 5 minutes to add a bit of crisp.
